The recipe for the whole pot: Patates antinahtes (crushed potatoes with coriander and wine)

4 servings · 40 minutes

  • Small potatoes, unpeeled1 kg · 1000 g
  • Olive oil3 tablespoons · 41 g

  • Salt½ teaspoon · 3 g

Seasoning: 2 tablespoons coriander seeds, roughly crushed, pepper

  1. Wash and scrub the potatoes well and drain them.
  2. Press them lightly with the bottom of a glass or a pestle so they crack.
  3. Heat the oil in a wide frying pan with a lid and cook them, covered, over a low heat for 20–25 minutes, turning them, until soft inside and golden outside.
  4. Add the coriander and the wine and leave for 5–7 minutes, until a light sauce remains.
  5. Shake the pan for 2–3 minutes so the sauce coats everything, and season with salt and pepper.
